Jackfruit can grow up to 1 meter in length and weigh 15 kilograms, so taking a stroll beneath the evergreen jackfruit trees is not without its risks. When the fruit is ripe, it develops an extremely unpleasant odor similar to rotten onions. But first impressions are deceiving: The edible bulbs inside the fruit taste superb.
So we’re really only interested in the bulbs inside the jackfruit, which are processed into a fragrant, yellowish-white purée. Their sweet taste is sort of a mixture between banana and pineapple.
